The preparation

• Preheat your oven to 180°C.
• Season the legs of rabbit with salt and pepper. Blend the crushed hazelnuts into the cream cheese with a bit of pepper and then pour onto the meat.
• Place a slice of smoked bacon on top as well as a bay leaf and a thyme sprig. Place each piece onto a square of parchment paper and prepare to cook en papillote.
• Put the papillotes in the oven and cook for 45 minutes.
