The preparation
Wash all the vegetables.
Peel the onion, garlic, ginger, cut off the mushroom stems and deseed the peppers.
Finely slice the onions, cut the mushrooms in strips and the dice the peppers. Crush the garlic clove, grate the ginger.
Heat the oil in a wok and when it’s good and hot, add the garlic, onion and ginger and brown for 1 minute while mixing.
Add all the vegetables and sauté them for 5 minutes, stirring continuously.
Salt, pepper, sprinkle with curry. Remove from burner, cover and leave the vegetables for 1 minute before serving.
