The preparation
Pour bulgur into a large salad bowl, cover with twice the volume of boiling salted water and let cook 10 to 15 minutes until the grains are tender. Drain and let cool-down.
Cut the broccoli into small florets, immerse in boiling salted water for 10 minutes. Drain, set aside.
Cut the cucumber and pepper into little pieces, the olives and onions into rings.
Finely-chop the mint.
Mix together the grains, diced cheese and vegetables in a salad bowl. Salt, pepper, sprinkle with olive oil, a dash of lemon and mint. Set in the refrigerator until ready to serve.
