The preparation

• Wash and carefully dry the plums, cut them in half and remove the stones.
• For the crumble, mix together the flour, vanilla sugar and crushed up speculoos. Add the butter and knead with your fingers. The mixture should have a breadcrumb consistency. Place in the refrigerator.
• Put the plums in the slightly-buttered ramekins. Lightly cover with the crumble.
• Place in the oven for 15 to 20 minutes at 180°C. Remove from the oven and let cool before eating.
