The preparation

• Mix the eggs, water and salt in the flour with the spatula to obtain a slightly liquid batter.
• Bring a large quantity of salt water to a boil and prepare a bowl of cold water.
• Pour the batter into a vegetable mill and turn, put the small batter sausages into simmering water.
• Once the spatzli rise to the surface, remove with using a skimmer and immerse them into cold water.
• Drain then sauté them in butter until brown.
